A Taste of Peru: Exploring the Andes and Toasting with Pisco Sours

Signature Dish: Lomo Saltado

Ingredients:
1T extra virgin olive oil
1 lb beef sirloin, cut in strips
2 large onions, sliced
3 tomatoes, cut in wedges
3 cloves garlic, minced
2 tbsp soy sauce
2 tbsp red wine vinegar

Instructions: Add oil to a skillet or wok and heat until shimmering.  Stir-fry beef on high heat, add vegetables, season with soy sauce and vinegar. Serve with french fries and rice if desired.

Signature Drink: Pisco Sour Cocktail

Ingredients:
2 ounces pisco
1 ounce lime juice, freshly squeezed
1/2 ounce simple syrup
1 egg white
Garnish: Angostura bitters I

Instructions: Add pisco, lime juice, simple syrup and egg white into a shaker and dry-shake (without ice) vigorously. Add ice and shake again until well-chilled. Strain into a chilled Nick & Nora glass. Don’t have one? You can strain it into a rocks glass over fresh ice. Garnish with 3 to 5 drops of Angostura bitters. Using a straw, toothpick or similar implement, swirl the bitters into a simple design.
